Description:
Your traditional pasta salad kicked up with a little cayenne pepper and spices. Very full of flavor!
Ingredients:
1 lb. rigatoni pasta (spirals) 4 tbsp mayonnaise 8 oz. italian dressing 1/2 jar of olives (7 oz. jar) 1 tbsp parsley 1 tsp cayenne pepper 1 tsp crushed black pepper 1 tsp garlic powder 1/2 medium red onion 1 can chicken breast meat (sm) 1 tsp salt (to taste) 1 whole cucumber
Directions:
Add pasta to boiling water. Tip: Boiling the water first prevents your pasta from getting overly saturated and gives a better texture. While the pasta is cooking dice the onion and cucumber. I like the cucumber pieces to be large enough to crunch.
Once the pasta is done, strain and run cold water over it. I even put it in a bowl of ice water and put it in the frig for a couple minutes to make the pasta firm up a little. Strain the pasta again and add to a mixing bowl.
Finally, add italian dressing and mayo and fold in the other ingredients to taste. I estimated on the amounts above. I found that about a tsp of cayenne pepper mixed well throughout doesn't knock you out of your seat but gives you a nice little after thought once the other flavors subside. Enjoy!
