Inspired by Z'Tejas Diablo Chicken Pasta.
1 qt. heavy cream
1/2 stick butter
1/4 cup blackening spice
2 cups cotija cheese
1 lb. infused linguine (bell pepper and/or spinach is nice)
1/4 cup fresh salsa (see here)
2 Jerk Chicken Breasts (see here)
4 fresh Jalapenos, juliened
In a large stockpot, add cream, blackening spice, and butter. Place on medium heat for approximately 10 minutes. Reduce by 1/2, stirring occasionally.
Add 1 cup of the cotija cheese and the salsa and reduce for another 2 minutes.
Use a stick blender to puree until smooth. Should not be overly thick!
Cook the linguine and combine with the sauce. Plate the pasta.
Slice the chicken and place on top of the pasta. Garnish with fresh jalapenos and more cotija cheese.
Makes 8 serving(s).
